gRPC handler for GetUploadStatus — the parity of GET /uploads/status/{token}. The signed token is the capability; a tampered/invalid/missing token maps to INVALID_ARGUMENT (the gRPC analogue of the HTTP 400) with a curated message, never internal detail. A valid token whose document is not yet projected reports PENDING.
